Grilled Prime Rib

Ingredients
- 1 bone-in prime rib roast (about 6 to 8 pounds)
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional for a spicy kick)
- Olive oil, for coating
Instructions
- Remove the prime rib from the refrigerator and let it sit at room temperature for about 2 hours before grilling.
- Preheat the grill to high heat (around 500°F).
- In a small bowl, combine salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper to create the rub.
- Brush the prime rib with olive oil and then generously apply the rub over the entire surface of the meat.
- Place the prime rib on the grill and sear each side for about 2-3 minutes to form a crust.
- After searing, reduce the grill temperature to medium (around 325°F to 350°F).
- Continue to grill the prime rib, turning occasionally, for about 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
- Remove the prime rib from the grill and let it rest for about 20 minutes before carving. This allows the juices to redistribute throughout the meat.
- Carve the prime rib into thick slices and serve.
