Classic Au Jus
This Classic Au Jus recipe is a perfect complement to any roast, especially prime rib. Rich, flavorful, and incredibly easy to make, it's the ideal addition to elevate your meal.
Ingredients
- Drippings from a roasted prime rib or beef roast
- 2 cups beef broth
- 1/2 cup red wine (optional)
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, minced
- Salt and pepper, to taste
- 2 teaspoons cornstarch (optional, for thickening)
Instructions
- After removing your roast from the roasting pan, place the pan over two burners on low heat. If you grilled your meat, transfer the drippings to a saucepan.
- Add the beef broth to the pan, scraping up any browned bits from the bottom of the pan.
- Stir in the red wine, Worcestershire sauce, and minced garlic.
- Increase heat to medium-high and bring the mixture to a simmer. Reduce heat and let it simmer for about 10 minutes to meld the flavors.
- Taste and season with salt and pepper as needed.
- For a thicker au jus, mix cornstarch with an equal amount of water and stir into the simmering liquid. Cook for an additional minute until thickened.
- Strain the au jus through a fine mesh strainer into a serving bowl or gravy boat.
- Serve hot alongside your favorite roast or prime rib.
